Description
This crisp, dry Fino is one of the youngest styles of sherry. The wine is aged in barrels under a layer of flor yeast which gives the wine a unique fresh, salty character. Perfect with tapas like calamari, marinated anchovies or green olives.
Grape
Sherry is a fortified white wine produced in the Andalucia region in southern Spain from the Palomino Fino grape. The best sherries are usually dry. After fortification the wines are matured in a system of barrels known as a solera which ensures the consistency of the end product. There are two main types of sherry: Fino and Oloroso. Fino (and Manzanilla) are the lightest style which is flavoured by a naturally occurring yeast called flor which grows inside the barrels. Fino sherries are very dry, light, salty and yeasty with a citrus edge.
Producer
Bodegas Cesar Florido is a small quality focussed Bodega situated in Chipiona, a small coastal town west of Sanlucar. Family run since 18th Century this is one of the oldest producers in the region. The bodega also owns all 21 hectares of vineyards and age the wines in their traditional cellar.
